Design - Business - Concepts

Today, the ZSEM Summer School course in Entrepreneurship visited the Sheraton Hotel Zagreb for a tour of their food and beverage operations and a brainstorming session hosted by their General Manager, Ivan Sekulic.  Design, Modern, Croatian as leading words.  Walking later in the neigborhood, I ran into a former student, Borna Matkovic, at Croatian Chamber of Economy Center for Design.  We caught up and it was so inspiring to see what Croatian designers could do to apply their creative ideas to the spaces in the Sheraton.  Have a look at what over 70 designers in their network are inspired by this year in their catalog.  Please post your visions of the hotel restaurants and cafes from your youthful and international perspectives in the comment section with links.

  1. For the imperial cafe I thought about a different decoration, something simpler and less boring. With different types of furniture such as chairs, couches and tables clients can choose in order to feel more comfortable depending on their needs.

    Also de images on the wall look pretty and make the client wanna taste those beverages because they look very well.

    People can talk there and can spend a lot of time with friends, in a great atmosphere, so they will return.

  2. I think the cafe can do promotion like make a partnership with movie theater nearby and coupon and set the cheaper price for buying movie ticket or coffee. Need to change the dedign to more bright and similar style with terrace.

    For the restaurant, because they have a lot of window, they might be able to change http://www.sjcg.jp/wedding/bankquet/oriental.html I felt flower on the tables need to be bigger, fresh, and represent the season. So that it attracts people who comes to the restaurant often with different flowers.
    Menu can be all you can eat buffet for lunch with a lot of different dessert. ( this is famous in Japanese hotel and many woman go and eat there with their friends for lunch. The price is cheap think about it is hotel). Or we can do Ladies day so that woman can get food with cheaper price. (This is famous in Japan too and many restaurant, bar, movie theater or Karaoke do ladies day on Wednesday. There are free drinks, half price than normal price, and more). Or we can do this for cafe.

  3. Lounges are a great idea - espcially for the "American Bar'. If you don't want to be a huge club goer but "want to be seen", a lounge is a perfect place to grab some drinks and be with friends. I spend my 21st birthday at a rooftop lounge on top of the Dana Hotel in Chicago. See below:

    A red carpet lounge downstairs would be a great place for "pre-gaming" before a club or just to be somewhere if you don't feel like dancing.

  4. When it comes to Sheraton's restaurant, they decided to expand their target group on local people. What they should do is obviously offer more than just quality food, they must encourage good feeling that makes you want to come back every day.

    It would be a great thing to include candles in the evening and a bit more romantic atmosphere, while daytime should be more casual and oriented towards those who are in constant rush (business people, lunch breakes).

In order to help Sheraton to improve its looks (for me not only restaurant and cafe bar are problem, lobby is also part of the problem, because no one will want to go to their restaurant and cafe if the first thing you see - lobby, looks old fashioned and outdated)I found examples on Sheraton hotels worldwide.

    They told us they don't want to change restaurant a lot and want everything to stay wooden, so I think this is a great example for that. Here we can see wood on the floor (instead of an old, ugly carpet) and all over the restaurant with warm bright brown colors, but still with a little touch of traditional in modern style.

    I would make something like that, with modern pictures on the wall. Everything is different than now, modern but still with home atmosphere, warm and accessible.   6. Concerning Imperial caffe, I would like to suggest design as in Carpe Diem Barcelona (http://carpediem.es/)

    The idea is caffe bar where business people can go after conference, young people before and after cinema. It can also be meeting place for young people before going clubbing.
    The lights are made of LED which electronically can change colours.
    The whole solution will be presented by VIDA team.

  7. THE TIE BAR

    I was thinking replacing Imperial caffe with „The tie bar“
    We all know how Croatians are proud of their invention of tie, and probably connecting ties with something traditional, but I would like to jump in with inovative design.

    The tie bar is for young business people who want to relax after work, gossip their boss, and drink nice cocktail.

  8. I was thinking about a lot of restaurants, cafes and similar objects which I found interesting and that created a buzz when they were (or are now) new on the market. I was in most of them and I thought about their interior, message that they are sending to the customers, services they are offering and the promotion they used. I think that it is useful to see how they made it on the market and implement some of those ideas and novelties. I also put these and some more links on my facebook account and asked my friends to comment them so I will collect the info and add them here to see what did attract others to these good places..

    Maharadja – an Indian restaurant, the only one in Croatia – maybe not the best choice for a “new, hip” place, not even so good decorated.., BUT has a certain buzz going on. Some people hate it (not so clean, a bit strange atmosphere..), but the ones that don’t hate it love it – it’s retro, it’s original, it’s good food, it’s something people talk about.     Torte i to – Different is the main word that I think about when someone mentions Torte I to… - they were the first ones to offer non-traditional cakes in an cool, modern space and for now they got the most positive comments on my FB page. http://www.torte-i-to.hr/
    Again, something new, but even though it’s sweets and not so far from Torte i to, it has a different conception. It’s a cool place to sit for a cup of coffee or a smoothie and nibble on some fine cookies. http://www.cookiefactory.hr/
    Žlica i vilica (Fork and spoon)This restaurant could be a serious competition to a future restaurant in Sheraton. First of all because of the location – it’s around 200m away; but also because it’s just GREAT! Our group went there today to check out the competition and we were impressed. The interior is great, free wi-fi, a lot of electricity plugs, nice colors, we did not try the food but did check out the plates that are going on the tables and the portions were big, prices were O.K.     Prasac (The Pig) - I was never in this restaurant but I did hear a lot of good things about it. Waiting for a bit more comments to see what is the perception of it.. http://www.prasac.hr/#o_nama
    Marcellino – an upscale place with a recognition from the profession and gastronomes. The terrace is absolutely amazing!   9. Probably, every well known cafe has it's own and memorable trademarks; whether it is a some product, a pleasant atmosphere or something else that wakes up associations in customers. Well, I don't support opinion that Imperial Cafe in Sheraton possess any of these. You see, the impression on customers is the most imporatnt fact that provides cafe successfull business. Perhaps, if there is a unique coffeee made there, sky is the limit for your future business. Someone said once“good coffee is more than just a good coffee if you can smell it while you're walking towards cafe. It doesn't have to be just the coffee.
    Food, that is offered in a cafe, should be creative, tasty and healthy; people really don't care for money if they see it. Of course decorations and atmosphere can have strong effects in contributions to enjoy your chit-chat, combined with coffee, as opposed to old fashioned establishments with food that wouldn't be popular in 19th century.
    Mixing all these elements cafe will, soon or later, define it's business policy and achieve their desirable goals. It is important to have in mind that we live in 21st century and trends are changing rapidly; those who don't follow that are simply- out of game.

    Lorenzo& kakalamba- you MUST see this place. It a fusion of italian and balkan society settled in Beograd. Design it's a fabulous kitch! There is a glass floor through witch you can see kitchen with chefs cooking, every chair is a masterpiece and it is all inspired by Italy. The idea is to make a restaurant where you can feel, stimulate all your senses.
    This is really inspiring place!

  12. My favorite bar in Zagreb is Booksa.
    So it is an union, a mixture of library, bookstore and cafe bar. The concept is made for customers who like to read books while they enjoy drinking coffee. The design of Booksa is made very simple , it has furniture such as cosy sofas, shelves with bunch of books on them, tables and chairs. I especially love the feeling you get when you are inside. It gives you feeling like you are in your own living room, reading book and just relaxing.
    Also there are organized bunch of social events such as reading poetry, music nights, promotion of newly written books, magazines...
    You really must love it!

    My favorite place to go 2 is Starbucks .

    Unfortunately i only go to it when i am out side Croatia and that not that often :(

    I am compliantly addicted to it. Coffee is something i adore the most especially in different way .

    Like frapucino or combined with white chocolate ect.....

    It is decorate in Italian style comfort ,warm and it gives you a feeling like you are home or living room.đ

    Its a place where you can find student learning , surfing on the net , business people on a meeting , people in a hurry so it would gratly adopt to this place which would accumulate a lot people from Branimir Centar , Sheraton , tourist
    and lovers in Croatia .
    It is a great place to meet people , surf on the internet , go with friends , enjoy coffee...

    Zagreb need something new and different this is it it will give people a new decision and chose where to go out ,because all dose things around here are the same and plane have nothing new to offer.
